Is this a “projection” though? I thought that a proper projection would distort the shape more than what’s shown here.

It is a projection, and the great thing about it is that it does not distort things (too much). I used the plots to validate a package I wrote: https://github.com/alex-hhh/geoid/wiki, which is inspired by the google S2 library

Looking at it, I would have guessed the mid-line goes trough Togo, etc. Taking out a ruler, it shows that it is indeed lower and on the equator…

This is the entire thing unwrapped, the equator goes horizontally through faces 0 and 1 and vertically through faces 3 and 4
